The Sicilian black pig represents one of the traditional local excellences. In ancient times it was raised in the wild and still today this method is used to preserve the original flavor and quality of the product.
There are many Sicilian cured meats that can be made with the Sicilian black pig but the typical Palazzolese product is represented by the sausage. It is made with Sicilian black pig raised on site, black wine from Val di Noto, chilli and wild fennel.
The taste and high quality of the raw material are the masters and in 2015 the traditional sausage from Palazzolo became part of the Slow Food presidium

Oil’s Path

The cultivation of oil in Sicily has ancient origins. From the olive groves of the Iblei Mountains a high quality Sicilian extra virgin olive oil is extracted, with a fruity flavor and aroma, with a long history. The olive has unique peculiarities and among the many varieties of olives present, the one used on site is the Tonda Iblea.
From the olive harvest, performed manually as tradition has it, to the visit to the mill to see the milling, kneading and extraction up to our tables to feel the warmth of the Sicilian family.

Domus Hyblaea Resort is located in a wonderful olive grove. Here you can try Iblea olives collection together with our staff and then, you can rest tasting our extra virgin olive oil, called “Nettare degli Iblei”, with a glass of delicious local wine.
